Dry Fly Washington Wheat Whiskey is 100% local soft white wheat. It is distilled twice in traditional American whiskey style. The it is aged minimum 3 years in new 53-gallon American Oak barrels with a #3 char.

Dry Fly Cask Wheat Whiskey is the same whiskey as our 90 proof wheat whiskey, but bottled at cask strength: 120 proof. It is our highest rated whiskey ever, and shows that a 100% wheat whiskey can be bigger and bolder. It typically drinks much softer than its 120 proof.

Dry Fly Triticale Whiskey is made from one specific seed variety of triticale, grown on the same 117 year-old homesteaded family farm as our wheat. Triticale is a hybrid of wheat and rye, developed in Scotland in the 1800’s. It is the world’s only straight triticale whiskey that drinks a little like a rye with peppery overtones, but finishes like a soft wheat whiskey.

Dry Fly Bourbon 101 was the first legal bourbon ever made in the state of Washington! It features a 60% corn(grown by our local Hutterian Settlement), 20% wheat, and 20% barley mash bill. Aged in 53-gallon barrels for a minimum of 4 years, it has strong corn frBarrel Aged Gin is a one year aged version of our regular gin. With the same botanical deck, it is aged in one of our own wheat whiskey barrels on second use. This aging is typically longer than most aged gins and results in a softer, rounded version of our gin with a bit of blonde color.

Straight Washington Port Barrel

Wheat Whiskey

Dry Fly Port Finish Wheat Whiskey is the same whiskey as our Washington Wheat, aged 3+ years in American Oak and then moved to a Port Wine barrel for an average of 6-12 months. It has a soft port finish and a slightly higher tannin level from the port barrel.
